Water is Everything
Water is everything. In San Rafael we use water straight from the Andes. Old irrigation ditches guide water to different farms and even through the city itself.
We refill our represa (farm lake) with this valuable water to use sparingly on our vines. Remember, stress makes good wine. Just pure water and the minerals it carries down from the Andes. In the early days we would use hoes to steer water with dirt trenches.
Now we've installed drip irrigation to get better control of the flow. Farmers have been using this water for hundreds of years to create a little oasis in the desert.
