Wine aroma compounds originate from two primary sources: grape-derived compounds present in the fruit itself, and fermentation-derived compounds produced during the winemaking process. Primary aromas come directly from grape varieties and include terpenes, esters, and aldehydes that give wines their varietal character—such as the citrus notes in Sauvignon Blanc or floral qualities in Gewürztraminer.
