Lactic acid is a mild, smooth organic acid (C₃H₆O₃) formed in wine through malolactic fermentation, a secondary fermentation process where harsh malic acid is converted into softer lactic acid by lactic acid bacteria, primarily Oenococcus oeni. This transformation typically reduces wine’s total acidity by 1-3 g/L, creating a rounder, creamier mouthfeel and often imparting subtle buttery or creamy aromas due to diacetyl production. Lactic acid has approximately half the perceived tartness of malic acid, making wines more approachable and less sharp. The process is particularly common in red wines and premium Chardonnays, where it enhances complexity and texture. In cool climate regions like Burgundy or parts of Argentina’s high-altitude vineyards, malolactic fermentation helps balance naturally high acidity levels. Winemakers can encourage or prevent this process through temperature control, pH adjustment, and sulfur dioxide management. The resulting lactic acid contributes to wine’s aging potential and structural harmony, though excessive levels can create undesirable sour or yogurt-like flavors.
