Minerality meaning in wine
Minerality is a descriptive tasting term used to characterize flavors and aromas in wine that evoke stones, rocks, wet earth, chalk, slate, or other geological elements. This sensory perception creates associations with the vineyard’s terroir and soil composition, leading many to believe these characteristics directly transfer from minerals in the soil to the wine. However, recent scientific research has challenged this traditional understanding, revealing that most mineral-like sensations in wine actually originate from sulfur compounds produced during fermentation, particularly thiols and other volatile sulfur compounds. These molecules can create aromas reminiscent of flint, wet stones, oyster shells, or metallic notes. Minerality is most commonly associated with certain wine styles, including Chablis Chardonnay, Sancerre Sauvignon Blanc, Riesling from slate soils, and various Champagne expressions. The perception of minerality can be influenced by factors such as yeast strains, fermentation temperature, lees contact, and winemaking techniques rather than direct mineral absorption from soil. While the term remains scientifically imprecise, it serves as a valuable sensory descriptor that helps communicate the unique character and sense of place that certain wines express, contributing to discussions about terroir and regional wine identity.
