Stuck fermentation meaning in wine

A stuck fermentation occurs when yeast cells become dormant or die before completing the conversion of grape sugars into alcohol, leaving residual sugars in the wine. This problematic condition typically manifests when fermentation stops with more than 2-4 grams per liter of residual sugar remaining, well before reaching the intended dryness level. Common causes include temperature stress from excessive heat (above 32°C/90°F), which can kill yeast cells, or insufficient nutrients like nitrogen, phosphorus, or vitamins essential for yeast metabolism. High sugar concentrations exceeding 25-27 Brix can create osmotic stress that inhibits yeast activity, while pH imbalances below 3.0 or above 4.0 can also halt fermentation. Other factors include excessive sulfur dioxide levels, alcohol toxicity when levels exceed yeast tolerance (typically 14-16% ABV), or contamination by wild yeasts or bacteria. Winemakers can restart stuck fermentations through various interventions: gradually rehydrating and acclimatizing fresh yeast, adjusting temperature to optimal ranges (24-28°C/75-82°F), adding yeast nutrients, or diluting high-sugar musts. Prevention involves proper yeast selection, maintaining optimal fermentation conditions, and monitoring sugar levels throughout the process. Early detection is crucial, as prolonged stalled fermentations risk spoilage and off-flavors.
