Autolysis is the enzymatic breakdown of dead yeast cells (lees) that occurs naturally after fermentation, releasing cellular contents into the wine. This process involves the degradation of proteins, nucleic acids, and other cellular components through the yeast’s own enzymes. When wines are aged sur lie (on the lees), autolysis contributes desirable characteristics including enhanced mouthfeel, increased complexity, and distinctive flavors ranging from bread-like and nutty to creamy and mineral notes. The process is particularly valued in Champagne production, where extended lees contact during secondary fermentation creates the signature toasty, brioche-like flavors. Classic examples include Muscadet wines aged sur lie for 6-12 months, developing their characteristic mineral complexity and slight effervescence, and premium white Burgundies that gain richness and texture through prolonged lees contact. However, autolysis requires careful monitoring as excessive exposure can lead to undesirable traits such as bitter or sulfurous off-flavors. The timing and temperature control are crucial factors, with cooler conditions slowing the process and allowing for more controlled flavor development. Modern winemaking often employs bâtonnage (lees stirring) to maximize beneficial autolytic effects while preventing negative characteristics.
