This labor-intensive wine style requires meticulous hand-selection of individual grape berries affected by Botrytis cinerea (noble rot), a beneficial fungus that concentrates sugars and develops complex flavors by dehydrating the grapes. The botrytis infection creates the characteristic honeyed, apricot, and mineral notes that define these exceptional dessert wines.
