Brettanomyces is a genus of wild yeast that represents one of the most significant spoilage organisms in winemaking, producing distinctive off-flavors and aromas that can severely compromise wine quality. Commonly referred to as “Brett,” this yeast thrives in low-sulfur environments and can contaminate wines at various stages of production, from fermentation through aging and storage. The primary compounds responsible for Brett’s characteristic taints are 4-ethylphenol and 4-ethylguaiacol, which create aromas typically described as barnyard, horse stable, medicinal, band-aids, or smoky bacon. These phenolic compounds develop when Brettanomyces metabolizes naturally occurring phenolic acids present in wine. While some winemakers and consumers appreciate minimal Brett character as adding complexity—particularly in certain Old World wines—most consider it a serious flaw. Brett contamination is particularly problematic in red wines due to their higher phenolic content and lower acidity. Prevention strategies include maintaining proper sulfur dioxide levels (typically 0.5-0.8 ppm molecular SO₂), strict sanitation protocols, and careful barrel management. Once established, Brettanomyces is notoriously difficult to eliminate, often requiring filtration, high-temperature treatments, or complete barrel replacement to prevent recontamination.
