Cork taint is a wine fault caused primarily by the compound 2,4,6-trichloroanisole (TCA), which produces distinctive musty, moldy, wet cardboard, or damp basement aromas and flavors in wine. While traditionally attributed to contaminated natural corks, TCA can originate from various sources including wooden barrels, processing equipment, and winery environments treated with chlorine-based sanitizers. The compound forms when naturally occurring fungi interact with chlorophenolic compounds, often residual from bleaching processes. Cork taint affects approximately 2-7% of wines sealed with natural cork, though modern cork processing techniques have significantly reduced this incidence. The fault is detectable at extremely low concentrations, with human sensory thresholds as low as 2-4 nanograms per liter. Even minimal TCA presence can mask a wine’s intended aromatics and flavors, rendering it unpalatable despite being harmless to consume. The intensity ranges from subtle reduction in fruit character to overwhelming musty notes that completely dominate the wine’s profile. Alternative closures like synthetic corks, screw caps, and glass stoppers have emerged partly to eliminate cork taint risk, though each closure type presents distinct advantages and considerations for wine aging and development.
