TCA (2,4,6-trichloroanisole) is a chlorinated organic compound that represents the primary cause of cork taint, affecting an estimated 2-7% of all wines sealed with natural cork. This colorless, crystalline substance forms when naturally occurring fungi interact with chlorophenolic compounds present in cork, wood, or winery environments. TCA contamination produces the characteristic musty, wet cardboard, or damp basement aromas that mask a wine’s intended bouquet and flavors. Even at extremely low concentrations of 2-4 nanograms per liter, TCA becomes detectable to most wine drinkers, though sensitivity varies significantly among individuals. The compound doesn’t pose health risks but renders affected wines unpalatable and commercially worthless. Beyond cork closures, TCA can originate from contaminated wooden barrels, cardboard packaging, or winery infrastructure treated with chlorine-based sanitizers. Modern cork producers employ rigorous quality control measures, including steam distillation and supercritical CO2 extraction, to minimize TCA formation. Alternative closures like synthetic corks and screw caps have gained popularity partly due to TCA concerns, though natural cork remains preferred for premium wines due to its oxygen permeability properties that aid proper aging.
