Geosmin is a bicyclic sesquiterpene alcohol with the chemical formula C₁₂H₂₂O that produces distinctive earthy, musty, and “petrichor” aromas detectable by humans at extremely low concentrations of 5-10 parts per trillion. In wine, geosmin originates from two primary sources: soil-dwelling Streptomyces bacteria that colonize grape skins during ripening, and metabolic processes within the grape itself under specific environmental conditions. This compound contributes to the terroir expression in wines, particularly those from regions with clay-rich soils or vineyards experiencing wet conditions before harvest. While geosmin can enhance complexity by adding earthy minerality reminiscent of wet forest floor or fresh soil after rain, excessive levels may create undesirable musty off-flavors. Winemakers can manage geosmin through careful vineyard practices, including canopy management to improve air circulation, timing of harvest to avoid post-rain periods, and gentle grape handling to minimize skin contact. The compound is also naturally present in beets, potatoes, and freshwater fish, explaining similar earthy flavor profiles across these foods. In moderate concentrations, geosmin contributes to the authentic expression of place in wines, particularly enhancing the appeal of Pinot Noir, Syrah, and other varieties that benefit from earthy complexity.
