Thermal amplitude, also known as diurnal temperature range, refers to the difference between daytime maximum and nighttime minimum temperatures within a 24-hour period. In viticulture, this phenomenon is crucial for producing high-quality wine grapes, as the temperature variation affects grape metabolism, sugar accumulation, and acid retention. During warm days, grapes undergo photosynthesis and sugar development, while cool nights slow down respiration and preserve natural acidity. Wide thermal amplitudes, typically ranging from 15-20°C (27-36°F) or more, are particularly beneficial as they allow grapes to ripen slowly while maintaining proper acid-sugar balance. This condition is commonly found in high-altitude wine regions, mountainous areas, and continental climates with clear skies. The temperature differential enhances anthocyanin development in red grapes, contributing to deeper color intensity, and promotes the formation of aromatic compounds that add complexity to wines. Regions with significant thermal amplitude, such as Argentina’s Mendoza province, Burgundy’s hillside vineyards, and California’s mountain appellations, are renowned for producing wines with excellent structure, vibrant acidity, and concentrated flavors. Conversely, areas with minimal thermal amplitude may produce grapes with lower acidity and less complex flavor profiles.
