Volatile phenols are phenolic compounds found in wine that possess the ability to evaporate at relatively low temperatures, making them detectable by aroma. These compounds are primarily produced through the metabolic activity of certain yeasts, particularly Brettanomyces species, and bacteria during fermentation or aging. The most significant volatile phenols in wine include 4-ethylphenol and 4-vinylphenol, which typically produce undesirable medicinal, barnyard, or Band-Aid-like odors when present in concentrations above sensory thresholds (generally 400-600 μg/L for 4-ethylphenol). However, at lower concentrations, some volatile phenols can contribute positively to wine complexity. 4-ethylguaiacol, for instance, imparts pleasant smoky and spicy notes reminiscent of cloves or bacon, particularly valued in certain red wines. The formation of volatile phenols is influenced by factors including grape variety, winemaking practices, pH levels, and storage conditions. While often considered wine faults when excessive, controlled levels of specific volatile phenols can enhance a wine’s aromatic profile, demonstrating the delicate balance between defect and complexity in winemaking. Proper sanitation and sulfur dioxide management help control unwanted volatile phenol production.
