Acetic acid (CH₃COOH) is the predominant volatile acid found in wine, typically present in concentrations ranging from 0.2 to 0.7 grams per liter in healthy wines. This colorless organic compound is produced naturally during fermentation through the metabolic activity of acetic acid bacteria, particularly Acetobacter and Gluconobacter species, which convert ethanol and sugars into acetic acid in the presence of oxygen. While small amounts contribute to wine’s complexity and can enhance certain flavor profiles, elevated levels above 1.2 g/L create undesirable vinegar-like aromas and sharp, pungent tastes that indicate wine spoilage or poor winemaking practices. Acetic acid formation is accelerated by exposure to air, warm temperatures, and contaminated equipment, making proper sanitation and controlled oxygen management crucial during winemaking. In Argentine wines, particularly those from high-altitude regions like Mendoza, careful temperature control and modern winemaking techniques help minimize unwanted acetic acid production while preserving the wine’s intended character. The compound is highly volatile, meaning it readily evaporates and contributes significantly to wine’s aromatic profile, making it easily detectable by smell even at relatively low concentrations.
