Acetobacter meaning in wine

Acetobacter is a genus of aerobic bacteria that poses a significant threat to wine quality by causing acetification, the process that converts ethanol into acetic acid and ultimately transforms wine into vinegar. These rod-shaped bacteria require oxygen to survive and typically enter wine through contact with air, contaminated equipment, or infected fruit flies (Drosophila). Acetobacter thrives in warm temperatures between 25-30°C (77-86°F) and in wines with pH levels above 3.5. The bacteria produces acetic acid concentrations that, when exceeding 0.7-1.2 grams per liter, create the characteristic sharp, pungent vinegar smell and taste that renders wine unpalatable. Prevention involves maintaining proper sulfur dioxide levels (30-50 ppm free SO₂), minimizing oxygen exposure through careful racking and topping, sanitizing all equipment, and controlling cellar temperatures. Once acetification begins, it’s irreversible, making prevention crucial. Winemakers monitor for early signs including volatile acidity increases and the distinctive nail polish remover aroma of ethyl acetate, a byproduct of acetobacter metabolism. Modern winemaking practices, including sterile filtration and controlled atmospheres, have significantly reduced acetobacter infections, though vigilance remains essential for maintaining wine quality and preventing economic losses.
