Volatile acidity (VA) refers to acids in wine that can evaporate at relatively low temperatures and are detectable on both the nose and palate. The most common volatile acids are acetic acid (vinegar-like) and carbonic acid, though butyric, formic, and propionic acids may also be present in smaller quantities. These acids form naturally during fermentation through yeast metabolism and bacterial activity, particularly by Acetobacter and Brettanomyces yeasts. In moderate concentrations (typically 0.3-0.6 g/L), volatile acidity can add complexity and lift to a wine’s aromatic profile. However, excessive levels above 1.2 g/L are considered a serious wine fault, producing sharp, vinegar-like aromas and harsh, acidic flavors that overpower the wine’s intended character. High VA often results from poor sanitation, excessive oxygen exposure, or uncontrolled bacterial infections during winemaking or storage. Professional tasters can detect VA at concentrations as low as 0.4 g/L, describing it with terms like “nail polish remover,” “vinegar,” or “volatile.” Legal limits vary by region, with most wine-producing countries setting maximum allowable levels between 1.0-1.5 g/L for table wines. Proper cellar hygiene, sulfur dioxide management, and temperature control are essential for preventing problematic volatile acidity levels.
