What is Amontillado?
Amontillado is a sophisticated style of Sherry wine that represents a unique evolutionary stage in fortified wine production. Beginning its life as a Fino Sherry under a protective layer of flor yeast, Amontillado undergoes a dramatic transformation when this biological veil eventually dies and sinks to the bottom of the barrel. Once the flor disappears, typically after 4-6 years of biological aging, the wine becomes exposed to oxygen and enters a second phase of oxidative aging. This dual aging process creates Amontillado’s distinctive character: it retains the delicate, saline qualities from its early flor-protected period while developing rich, complex nutty flavors including almonds, hazelnuts, and walnuts from oxidative maturation. The wine typically reaches 16-18% alcohol content and displays an amber to deep golden color. Amontillado exhibits remarkable complexity with notes of dried fruits, caramel, and sea breeze minerality. Produced primarily in Spain’s Jerez region, authentic Amontillado must follow strict Consejo Regulador guidelines. The name derives from Montilla, a town famous for similar wines, though true Amontillado specifically refers to this unique two-stage aging process that creates one of Sherry’s most prized and versatile styles.
