Aseptic

Aseptic meaning in winemaking

Aseptic means free from contamination by unwanted microorganisms. In winemaking, it describes sterile or near-sterile handling conditions used to prevent spoilage yeasts, bacteria, and mold from entering wine during cellar work, filtration, bottling, or packaging.

Aseptic practice is broader than adding preservatives. It includes clean tanks and hoses, sanitary transfers, sterile or membrane filtration when needed, controlled bottling lines, and sealed packaging. Sulfur dioxide and sorbic acid can support microbial stability, but they are not the definition of aseptic.

The goal is to protect wine quality without stripping character: enough sanitation to avoid spoilage, refermentation, haze, or off-aromas, while keeping the intended flavor, aroma, and texture intact.
