Clarification and fining is a crucial post-fermentation process for the clarification of wine, designed to remove suspended particles, proteins, dead yeast cells, and other unwanted materials that can cause cloudiness or instability in wine. This process involves adding fining agents that bind to these particles through electrical attraction or physical entrapment, causing them to coagulate and settle to the bottom of the tank or barrel where they can be removed through racking or filtration. Traditional protein-based fining agents include egg whites (albumin), particularly effective for red wines as they bind to harsh tannins, casein derived from milk proteins, and isinglass from fish bladders. Modern vegan alternatives include bentonite clay, which carries a negative charge that attracts positively charged particles, and kaolin clay. Other agents include PVPP (polyvinylpolypyrrolidone) for removing phenolic compounds and activated charcoal for color or off-flavor correction. The choice of fining agent depends on the wine style, desired clarity level, and specific defects being addressed. After fining, wines typically require 2-6 weeks for complete settling before the clear wine is separated from the sediment, resulting in a stable, brilliant wine ready for bottling.
