Mannoprotein meaning
Mannoproteins are complex nitrogen-rich proteins released by yeast cells during autolysis, the natural breakdown process that occurs when wine ages on its lees (dead yeast sediment). These macromolecules, composed of mannose sugars bound to protein structures, play a crucial role in enhancing wine quality and character. During extended lees contact, typically lasting 3-12 months or longer, yeast cells gradually decompose and release mannoproteins into the wine, along with amino acids, peptides, and other compounds. Mannoproteins contribute significantly to wine’s mouthfeel by increasing viscosity and creating a smoother, more rounded texture. They also provide natural protein stability, helping prevent protein haze formation and reducing the need for fining agents. Additionally, these compounds can enhance color stability in red wines and contribute to improved foam quality in sparkling wines. The concentration of mannoproteins varies depending on yeast strain, fermentation conditions, and aging duration. Winemakers often employ techniques like bâtonnage (lees stirring) to maximize mannoprotein extraction, particularly in premium white wines like Chardonnay and Champagne, where the enhanced texture and complexity are highly valued characteristics.
