Sulfite compounds meaning in wine
In this wine glossary entry, compounds refers specifically to sulfite compounds—usually potassium metabisulfite or sodium metabisulfite—that are added to wine to help prevent oxidation, microbial spoilage, and unwanted fermentation. These sulfite compounds release sulfur dioxide (SO₂) when dissolved in wine, creating a protective barrier against unwanted chemical and biological reactions. Sulfites are particularly effective at inhibiting wild yeasts, bacteria, and molds that could compromise wine quality, while also preventing the oxidation that causes browning and off-flavors. Most winemakers add sulfites at multiple stages: during crushing to protect the must, after malolactic fermentation to stabilize the wine, and before bottling for long-term preservation. The typical dosage ranges from 25-150 parts per million, depending on the wine’s pH, alcohol content, and intended aging period. While sulfites occur naturally during fermentation at levels of 10-40 ppm, additional sulfites are necessary for commercial wine stability. Wines labeled as “sulfite-free” typically contain less than 10 ppm, though complete elimination is nearly impossible. These preservatives have been used in winemaking for centuries and are essential for producing consistent, shelf-stable wines that maintain their intended character during storage and transport.
