Cut

Cut meaning in wine

Cut in wine most safely means a deliberate blending adjustment: combining lots with different acidity, tannin, alcohol, color, or aroma to make a more balanced final wine. It can also be used negatively for adulteration, especially diluting wine with water, which is not a legitimate quality practice. Do not optimize this page for the general dictionary meaning of “cut.” For Champagne pressing, use the separate Taille entry; for distillation separations, use Fractions, Heads, or Feints.
