Vin de rebèche meaning in Champagne

Vin de rebèche is the final pressing juice from Champagne grapes, collected after the permitted cuvée and taille fractions. It is high in phenolics, bitterness, and coarse texture compared with the main Champagne press fractions, so it is not allowed for Champagne production.

In the standard Champagne pressing model, the rebèche comes after the first 2,050 liters of cuvée and the next 500 liters of taille from a 4,000 kg marc. Producers generally send it to distillation or other non-Champagne uses rather than blending it into sparkling wine.
