Fixed sulfur refers to sulfur dioxide (SO₂) molecules that have chemically bound with various compounds naturally present in wine, including sugars, aldehydes, ketones, and organic acids. This binding process occurs spontaneously during fermentation and aging, creating stable molecular complexes that render the sulfur dioxide inactive for protective purposes. Unlike free sulfur, which remains available to combat oxidation and microbial spoilage, fixed sulfur cannot perform these essential preservation functions. The binding is typically irreversible under normal wine conditions, meaning these sulfur molecules are permanently sequestered. Winemakers must account for this phenomenon when calculating total sulfur additions, as only the free sulfur portion provides actual antioxidant protection. Red wines generally bind more sulfur than whites due to higher levels of binding compounds like acetaldehyde and tannins. The ratio between fixed and free sulfur varies significantly based on grape variety, winemaking techniques, and wine age.
