Free run juice is the premium quality juice that flows naturally from grape berries immediately after crushing, without any mechanical pressure applied. This juice represents approximately 60-70% of the total juice yield from grapes and is considered the finest fraction due to its lower tannin content, reduced astringency, and cleaner flavor profile. The juice flows freely under the weight of the grapes themselves and gravity, extracting primarily from the pulp rather than the skins and seeds. Winemakers often separate free run juice from press juice during production, as it requires minimal processing and produces wines with more elegant, refined characteristics. In premium winemaking, free run juice may be fermented separately and either used exclusively for top-tier wines or blended with press juice in carefully calculated proportions. The gentle extraction process preserves delicate aromatics and prevents the harsh compounds found in skins and stems from entering the juice.
