Tannin(s)

Tannins are naturally occurring polyphenolic compounds that impart bitter and astringent sensations in wine, creating essential structure and mouthfeel. These compounds originate primarily from grape skins, seeds (pips), and stems during maceration, though they can also be introduced through oak barrel aging or added in powder form. Tannins are most prominent in red wines, where extended skin contact during fermentation extracts these compounds, contributing to the wine’s weight, texture, and aging potential. Different grape varieties exhibit varying tannin levels naturally - Tannat displays pronounced, robust tannins, while Pinot Noir typically shows softer, more delicate tannin structure. White wines generally contain minimal tannins unless subjected to extended skin contact (as in orange wines) or oak aging. Rosé wines similarly exhibit low tannin levels due to brief skin contact during production. Tannins serve multiple functions: they provide structural backbone, contribute to wine’s aging capacity through their antioxidant properties, and create the characteristic dry, puckering sensation on the palate. Young, tannic wines often benefit from aging, as tannins gradually polymerize and soften, integrating more harmoniously with other wine components to create smoother, more complex flavor profiles.
