Halbtrocken is a German and Austrian wine label term meaning “half-dry,” used for wines with modest residual sugar between dry and medium-sweet styles. In Germany, halbtrocken generally allows up to 12 g/L residual sugar, or up to 18 g/L when acidity is high enough to keep the wine tasting balanced. Austrian rules use a similar acidity-dependent upper range. The result is a wine that tastes noticeably off-dry but not overtly sweet, often with enough acidity to feel fresh rather than sugary. Halbtrocken is especially common with Riesling, Gewürztraminer, and Müller-Thurgau, where the slight sweetness can support fruit aromatics and pair well with spicy food, Asian dishes, and lighter fare.
