Phenolic compounds are naturally occurring chemical substances found primarily in grape skins, seeds, and stems that profoundly influence wine’s sensory characteristics and structural properties. These compounds, numbering over 1,000 different types in wine, are extracted during fermentation and maceration processes. The two most significant categories are anthocyanins, responsible for red wine’s color spectrum from ruby to deep purple, and tannins, which provide astringency, mouthfeel, and aging potential. Anthocyanins are concentrated in grape skins and contribute approximately 200-500 mg/L in red wines, while tannins range from 1-5 g/L depending on grape variety and winemaking techniques. Other important phenolic compounds include flavonols (contributing to wine stability), phenolic acids (adding complexity), and stilbenes like resveratrol (associated with health benefits). The extraction of phenolic compounds is influenced by factors including grape ripeness, fermentation temperature, maceration duration, and pressing techniques. White wines contain significantly fewer phenolics due to limited skin contact, typically 50-400 mg/L compared to red wines’ 1,000-4,000 mg/L. These compounds not only define a wine’s immediate sensory profile but also determine its evolution during aging, making them fundamental to wine quality and longevity.
