A rectifier is the second column in a patent still system used for producing wine-based spirits such as brandy, pisco, and grappa. Following the initial distillation in the analyzer column, the rectifier receives alcohol-rich vapors and performs crucial purification through fractional distillation. The column contains multiple perforated plates or trays that create distinct temperature zones, with each level acting as a mini-distillation chamber. As vapors rise through these plates, different alcohol compounds separate based on their boiling points—lighter, more volatile compounds ascend higher while heavier congeners condense at lower levels. This process allows distillers to achieve precise alcohol concentrations typically ranging from 85-96% ABV and remove unwanted impurities that could affect flavor and aroma. The rectifier’s design enables continuous operation, making it highly efficient for commercial spirit production. Wine-based distillates processed through rectifiers often exhibit cleaner, more neutral profiles compared to pot-distilled spirits, though some argue this comes at the expense of character and complexity.
