Wine sweetness chart: the quick answer

Wine sweetness has two different maps. Still-wine terms such as dry and medium-dry follow one set of sugar-and-acidity rules. Sparkling terms such as Brut, Extra Dry, and Sec follow another scale. Do not use one scale for both. A measured sugar value is useful, but it does not predict exactly how sweet the wine will taste.

OIV sugar categories

Glucose + fructose in the finished wine. The first two categories have acidity-dependent upper limits.

Why the split limits?

For dry, the limit can extend from 4 to 9 g/L when total acidity, expressed as tartaric acid, is no more than 2 g/L below sugar. For medium-dry, the ceiling can extend from 12 to 18 g/L when sugar minus total acidity does not exceed 10 g/L.

Current EU label terms

The bars use one 0–55+ g/L axis. Overlap is real: some measured wines qualify for more than one term.

Brut Nature has an extra condition: no sugar was added after secondary fermentation. EU rules also acknowledge that two terms can legally fit the same measured wine; only one is chosen for the label.

Still wine: the OIV classification

The International Organisation of Vine and Wine (OIV) defines the still-wine categories below by glucose + fructose, not by a taster’s impression and not by grape variety. The acidity exceptions are part of the definition, so a chart that simply says “dry equals 0–4 g/L” leaves out an important part of the rule.

These are international reference definitions. The exact term permitted on a particular bottle still depends on its market, wine category, origin, and applicable specification; jurisdiction and appellation rules can be narrower.

Sparkling wine: EU label terms

Sparkling terminology is a separate system. Under the current EU rule, Brut is drier than Extra Dry, and Extra Dry is drier than Sec. The everyday English words can therefore feel backward.

The ranges touch and sometimes overlap. That is not a drawing error. EU law says that when the measured sugar content justifies two listed terms, the producer selects one of those terms. Other countries and individual appellations can use their own controlling rules, so treat this as a precisely labeled EU reference, not a universal promise for every sparkling bottle in every market.

Sugar is measured; sweetness is perceived

Residual sugar is chemistry. Sweetness is a sensory response inside a complete wine. That distinction explains why two wines with the same measured sugar can taste different.

In a controlled experiment using fructose and tartaric acid in white wine, water, and ethanol media, trained assessors found that tartaric acid suppressed fructose sweetness more strongly than fructose suppressed sourness. It is useful evidence for the familiar tasting observation that acidity changes the balance—but it is not a calculator that converts grams per liter into one guaranteed sensation.

Several things can move the impression:

  • Acidity: sourness and sweetness interact, which is why the OIV itself allows acidity-dependent still-wine thresholds.
  • Aroma: ripe-fruit, floral, vanilla, or confectionary associations can make a wine seem sweeter even though smell does not add residual sugar.
  • Alcohol and texture: warmth and body can change the overall balance; they do not change the laboratory sugar result.
  • Bitterness and astringency: these sensations can make a wine feel firmer or drier without consuming its sugar.
  • Carbon dioxide, serving temperature, and context: bubbles, temperature, food, and individual sensitivity can alter the experience. They do not move the wine into a different legal sugar band.

For that reason, “bone-dry,” “off-dry,” and similar tasting language can be helpful shorthand, but it should not be presented as a universal instrument reading.

A grape variety is not a sweetness category

The essential rule is that any grape can be made in more than one sweetness style. Fermentation choices, blending or sweetening practices allowed by the applicable rules, fruit concentration, and the intended wine style determine the finished result. A floral aroma can suggest sweetness even when the analysis and label say dry.

That is why this guide does not put Riesling, Moscato, Torrontés, Malbec, or any other grape on a single “driest to sweetest” ladder. To choose a bottle, look for a sweetness term, a producer technical sheet, or an actual glucose/fructose or residual-sugar figure. The grape name alone cannot answer the question.

How to read a wine label in four steps

  1. Identify still or sparkling.The same word—especially Sec, Secco, Seco, or Dry—can land in a different place on the two maps.
  2. Read the exact term in context.Brut, Extra Dry, and Sec are not synonyms. Still-wine “dry” may include an acidity-dependent allowance.
  3. Look for a technical sheet.A measured g/L figure is more specific than a fruit-flavor description, although the applicable analytical definition still matters.
  4. Use your palate after the number.Acidity, aroma, alcohol, texture, bubbles, temperature, and food help determine how that sugar is perceived.

Why Sec, Secco, and Seco are confusing

On many still-wine labels, sec (French), secco (Italian), and seco (Spanish or Portuguese) communicate dry. In the current EU sparkling scale, those same language equivalents sit at 17–32 g/L, above Extra Dry.

Common wine-sweetness questions

Does dry wine have zero sugar?

Not necessarily. “Dry” is a category, not a synonym for laboratory zero. Under the OIV still-wine definition it can extend to 4 g/L, or to 9 g/L when the specified acidity relationship is met.

Is Extra Dry sweeter than Brut?

Under the current EU sparkling scale, yes. Brut is less than 12 g/L, while Extra Dry is 12–17 g/L.

Is Sec a dry wine?

It depends on context. Sec commonly means dry on a still French wine. On EU sparkling wine, Sec is the 17–32 g/L category and sits sweeter than Extra Dry. Use the full label, not the word in isolation.

Can a wine taste sweet even when it is labeled dry?

It can smell or feel sweeter than a drinker expects because sensory balance is not controlled by sugar alone. The label category and measured sugar remain compositional facts; aroma, acidity, alcohol, texture, temperature, and individual perception shape the experience.

The OIV and EU tables are reference systems, not a claim that one rule governs every bottle worldwide. Producer specifications, protected-origin rules, and national law should be checked for a particular wine.
