Carbonic acid (H₂CO₃) is a weak, volatile acid that forms when carbon dioxide gas dissolves in the water content of wine. This compound exists in a delicate equilibrium with dissolved CO₂ and cannot be isolated in pure form due to its inherent instability. In winemaking, carbonic acid plays a crucial role during fermentation and sparkling wine production, where CO₂ naturally dissolves into the wine matrix. The acid contributes to wine’s overall acidity profile and mouthfeel, particularly in sparkling wines where higher concentrations create the characteristic tingling sensation.
