Fermentazione naturale meaning
Fermentazione naturale means “natural fermentation” in Italian, but it is not one globally standardized sparkling-wine method. The phrase must be read with the appellation, label, or producer specification that uses it. It can refer to carbon dioxide created by alcoholic fermentation rather than externally injected gas; it does not by itself say whether fermentation occurred in bottle or in an autoclave.
For Asti DOCG, the current official production material describes clarified Moscato must held cold, then fermented under controlled conditions. When the intended alcohol and residual-sugar balance is reached, cooling and yeast removal stop the process before counterpressure bottling. The production specification calls the pressure-tank route natural fermentation in an autoclave, or the Martinotti method. Asti also has a separately defined traditional-method type.
