Hydrogen sulfide (H₂S) is a wine fault characterized by an unpleasant odor reminiscent of rotten eggs, caused by the combination of hydrogen and sulfur compounds during fermentation. This fault typically develops when yeast cells become stressed due to nutrient deficiencies, particularly nitrogen, or when fermentation temperatures are too high. The compound forms when sulfur dioxide (SO₂) used as a preservative reacts with organic matter in oxygen-poor environments. While initially detectable as a sharp, sulfurous smell, hydrogen sulfide can evolve into more complex and persistent mercaptans if left untreated, creating rubber-like or garlic odors that are extremely difficult to remove. Early detection is crucial, as fresh hydrogen sulfide can often be remedied through aeration, copper sulfate treatment, or racking the wine away from sediment. Prevention involves maintaining proper nutrient levels during fermentation, controlling temperature, and ensuring adequate yeast health. Winemakers monitor for this fault particularly during malolactic fermentation and aging, as it can develop months after primary fermentation. The threshold for detection is extremely low, making hydrogen sulfide one of the most noticeable and objectionable wine faults when present.
