Mercaptans are sulfur-containing organic compounds that represent one of the most recognizable and undesirable wine faults. These compounds form when ethyl and methyl alcohols react with hydrogen sulfide during fermentation or storage, typically under reductive conditions where oxygen is limited. The resulting mercaptans produce distinctly offensive aromas reminiscent of burnt rubber, garlic, onions, rotten eggs, or stale cabbage. Common mercaptans in wine include ethanethiol and methanethiol, which can be detected at extremely low concentrations—often just a few parts per billion. This fault typically develops when wines are stored on their lees for extended periods without adequate sulfur dioxide protection, or when fermentation occurs in overly reductive environments. Poor cellar hygiene, contaminated equipment, or stressed yeast can exacerbate mercaptan formation. While some mercaptans can be removed through copper sulfate treatment or aeration, severe cases may render the wine undrinkable. Prevention focuses on maintaining proper sulfur dioxide levels, regular lees stirring, and ensuring adequate oxygenation during fermentation. Professional winemakers monitor for mercaptan development through regular sensory evaluation, as these compounds can mask desirable fruit characteristics and completely compromise wine quality.
