Reduction meaning in wine

Reduction is a winemaking condition that occurs when wine receives insufficient oxygen during fermentation, forcing yeast to seek alternative nitrogen sources from amino acids naturally present in grapes. This oxygen-starved environment triggers the production of volatile sulfur compounds, including hydrogen sulfide and mercaptans, which manifest as distinctive and often unpleasant aromas. Common reductive aromas include rotten eggs, burnt matches, garlic, rubber, and rotten cabbage. However, reduction can occasionally produce more acceptable characteristics such as struck flint, wet stones, or tropical notes like passionfruit. Contrary to popular misconception, reduction is not caused by added sulfites (sulfur dioxide) used as preservatives, but rather by the metabolic processes of yeast under anaerobic conditions. Winemakers can address mild reduction through aeration techniques like racking, decanting, or using copper sulfate treatments. Some wine styles, particularly certain Burgundies and Rhône wines, may exhibit subtle reductive characteristics that are considered part of their terroir expression. The intensity of reduction varies from barely perceptible mineral notes to overwhelmingly pungent odors that can mask a wine’s fruit character entirely.
