Fatty acids in winemaking refer to volatile organic compounds that can develop during fermentation and wine storage, including butyric acid, propionic acid, and other short-chain fatty acids. These compounds typically arise from bacterial activity, particularly when wines are exposed to oxygen or experience malolactic fermentation under suboptimal conditions. While some fatty acids occur naturally in small concentrations and contribute to wine complexity, elevated levels produce undesirable sensory characteristics including rancid, cheesy, or sweaty aromas reminiscent of spoiled butter or barnyard odors. Butyric acid, for example, imparts a distinctly unpleasant smell similar to vomit when present above threshold levels of approximately 1-2 mg/L. These compounds are considered wine faults when detectable, as they mask the wine’s intended flavor profile and indicate potential microbial spoilage. Prevention involves maintaining proper sulfur dioxide levels, controlling fermentation temperatures, minimizing oxygen exposure, and ensuring sanitary winemaking practices. Unlike fixed acids that contribute to wine structure and balance, fatty acids represent volatile acidity that negatively impacts wine quality. Professional tasters are trained to identify these off-flavors during quality control assessments, as their presence often signals the need for corrective measures or wine rejection.
