Cellaring refers to the systematic storage of wine under optimal conditions to facilitate aging and maturation over time. This practice involves maintaining wines at consistent temperatures between 50-59°F (10-15°C), with humidity levels around 70%, minimal light exposure, and freedom from vibrations. Proper cellaring allows wines to develop complex secondary and tertiary flavors through chemical processes including tannin polymerization, ester formation, and gradual oxidation. Red wines typically benefit most from cellaring, with premium bottles improving over 5-20 years or more, while most white wines are best consumed within 2-5 years, though exceptional examples like aged Chardonnay or Riesling can cellar for decades. The cellaring process transforms harsh tannins into smoother compounds, integrates flavors, and develops characteristic aged wine aromas such as leather, tobacco, and dried fruits. Modern cellaring can occur in traditional underground cellars, climate-controlled wine refrigerators, or professional storage facilities.
